Offering healthy cuisine with spectacular views, Canyon Breeze Restaurant is pure Southwestern elegance

CONTRIBUTED CONTENT — Offering Southwestern elegance with a tranquil atmosphere and unique, thoughtfully prepared culinary options, Canyon Breeze Restaurant in Ivins is an oasis for food lovers.

“Our chefs are choosing the best ingredients possible and preparing them in a healthy manner,” said Tracey Welsh, general manager of Red Mountain Resort. “But just because it’s healthy doesn’t mean that we’re compromising how delicious everything is.” 

Nourishing yet flavorful food fits perfectly with the overall model of the resort, a destination for active wellness retreats. Fresh produce, whole grains, raw nuts, seeds, herbs, pasture-raised meats, vegetarian protein sources – it all comes together at Canyon Breeze.

Many of the menu items are easily customizable to accommodate vegetarian and vegan preferences, Welsh said, adding that nearly every dish is prepared from scratch. The culinary team uses healthy substitutions whenever possible. 

Even when it comes to dessert, the bakers at Canyon Breeze often find creative ways to make delicious dishes healthier than visitors might expect. They look and taste like an elegant dessert should, yet they are often far lower in fat and calories. Many are gluten-free and vegan-friendly as well. 

The talented culinary staff is led by executive chef Chad Luethje, who brings more than 25 years of experience at luxury resorts to the Canyon Breeze kitchen. He rejoined the team in 2008 and is highly particular about the items that go into each and every dish, Welsh said.

Executive sous chef Eric Lujan, a recent addition to Canyon Breeze, has traveled the world working in restaurants and on cruise ships. A native of Peru, he also completed a master’s program in culinary arts and gastronomy.

Canyon Breeze wants to leave visitors with a lasting taste of the cuisine in another way as well: Their signature cookbook, “Inspired Eating,” is available for purchase. 

Breakfast (offered from 6:30-9:30 a.m.) and lunch (11:30 a.m. to 1 p.m.) are served buffet-style, while dinner (5:30-8 p.m.) is seated dining with a menu. Reservations are highly recommended. Visitors can enjoy live music from local artists on Friday and Saturday evenings as well as during Sunday brunch from 10:30 a.m. to 1 p.m. Canyon Breeze’s wine and beer license allows them to offer classic brunch cocktails as well as refreshments with dinner. 

The restaurant’s relaxing location near the south entrance of Snow Canyon State Park makes it the perfect stopping point for a light lunch, coffee or pastry before heading out on the trails. At the Canyon Counter, visitors can snag a latte and snack such as a hearty salad or tasty sandwich to fuel their adventures. 

Enjoy an upscale dining experience before catching a show at the Tuacahn Center for the Arts just up the road. Canyon Breeze offers the largest outdoor dining space in Southern Utah, and it’s pet-friendly. The environment is quiet and peaceful, and there’s plenty of parking. 

“It’s such a departure from being in downtown St. George,” Welsh said. “Being surrounded by the red rocks really does make you feel like you’re on vacation.”

Blended naturally into a landscape of vivid red rock cliffs and canyons just outside St. George, Red Mountain Resort offers everything guests need to relax, renew and rediscover their passion for adventure and wellness. Discover gourmet cuisine with a health-inspired approach at Canyon Breeze. The dinner menu changes frequently and is available online, and seating can be reserved through OpenTable. Limited reservations are available for the Thanksgiving buffet on Nov. 25. Additionally, the restaurant offers a catering menu for holiday parties.
